1 knob of garlic - finely chopped
1 tbsp olive oil
1 kg roasting lamb - rub salt & pepper on both sides
1 onion - sliced
2 carrots - sliced
5 small potatoes - sliced
daikon radish - cut into pieces (both leaf and white part)
1 satchel SAORI 100% Natural Japanese Dashi Broth
250 ml dry red wine
500 ml cold water
some thyme
bay leaf
1 tbsp SAORI Traditional Mirin
1 tbsp fermented Japanese soy sauce
salt and pepper to taste

Simmer garlic in olive oil until golden brown.

Add onion and stir-fry over high heat until golden brown.

Add lamb and cook over high heat for 2 minutes on each side.

To make umami wine broth base, add 1 cup dry red wine and 2 cups cold water.

Add dashi powder into the broth then mix in.

Add thyme and bay leaves.

Cover with lid and simmer over low heat for 60 minutes.

Add remaining vegetables, cover, and simmer a further 30 minutes.

Add 1 tbsp mirin, 1 tbsp soy sauce, and salt & pepper to taste.
