La Stroscia - il dolce all'olio d'oliva ligure

Preheat the oven to 350°F (175°C) and grease a cake pan.

In a mixing bowl, whisk together the olive oil and sugar until well combined.

Add the eggs one at a time, mixing well after each addition.

Stir in the vanilla extract, lemon zest, and almond extract until smooth.

In a separate bowl, combine the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, alternating with the milk.

Mix until just combined, being careful not to overmix.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.

Once cooled, dust the top with powdered sugar.

Garnish with fresh fruit as desired before serving.
