Instructions

  1. 1Heat oil in a pan over medium heat until shimmering.
  2. 2Add chopped onions and sauté until translucent, about 5 minutes.
  3. 3Stir in minced ginger, garlic, and green chili; cook for 2-3 minutes until fragrant.
  4. 4Add chopped tomatoes and cook until soft, about 5 minutes.
  5. 5Mix in coriander powder, cumin powder, turmeric powder, and salt; sauté for 2 minutes.
  6. 6Add the mixed vegetables and stir well to coat with spices.
  7. 7Pour in water and bring to a boil; reduce heat to low and cover.
