Turkish Style Cabbage Rolls
Cultural Context
Originating from the Ottoman Empire, Turkish cabbage rolls, or 'Lahana Sarması', are a beloved dish that showcases the region's love for stuffed vegetables. Traditionally enjoyed during family gatherings and festive occasions, these rolls symbolize hospitality and abundance. Today, variations can be found across the globe, reflecting local ingredients and preferences, making them a versatile comfort food.

Avocado oil offers a healthier fat profile, while canola oil is often more affordable.
Cut the medium cabbage in half, then cut each half into quarters.
Remove the core from the cabbage quarters and place them in boiling water.
Add more water to the pot if necessary and cover to let the cabbage soften, checking for doneness with your hands.
Boil the cabbage for 8-9 minutes, adjusting time based on the firmness of the leaves.
Remove the cabbage from the water and let it cool.
In a mixing bowl, add 2 cups of rice and rinse it.
Add 2 tablespoons of tomato paste to the rice.
Pour in 1 cup of vegetable oil and add 150 grams of ground beef.
Add 1 teaspoon of paprika, 1 teaspoon of oregano, 1 teaspoon of salt, 1 teaspoon of red pepper flakes, and 1/2 teaspoon of black pepper.
Mix the filling thoroughly and then add 1 chopped onion, 1 green bell pepper, 1 red bell pepper, a handful of chopped parsley, and 1 grated tomato.
Mix the filling again until well combined.
Lay out the cabbage leaves and place a spoonful of filling at the base of each leaf, rolling tightly to enclose the filling.
Place the rolled cabbage in a pot, layering with leftover cabbage leaves at the bottom to prevent sticking.
Add 2 teaspoons of salt on top of the rolls and pour in 4 cups of hot water.
Cover the pot with a plate to weigh down the rolls and bring to a boil.
Once boiling, reduce to medium heat and cook for 35-40 minutes, checking at 15-20 minutes to ensure even cooking.
After cooking, prepare a topping by melting 2 tablespoons of butter and adding 1 teaspoon of red pepper flakes.
Drizzle the melted butter over the cabbage rolls and let them rest for 15-20 minutes before serving.
