5 teaspoons salt
2 tablespoons ginger and garlic paste
6 tablespoons Kashmiri mixed masala
2 L water

Wash two whole chickens and remove the skin (this is optional). Cut them into curry pieces.

Finely slice 10 medium onions.

Finely chop 10 green chilies and two stems of curry leaves, and roughly chop 3 jam tomatoes.

Peel and wash 10 medium potatoes, making a split in the center for faster cooking. Keep them in water to prevent browning.

In a large pot, add 1 cup (240 ml) of vegetable oil.

Add a few cinnamon sticks, 2 cardamom pods, 50 cloves, 2 tablespoons of fennel seeds, 1 tablespoon of cumin seeds, 5 bay leaves.

Add the sliced onions and fry on high heat until golden brown.

Once golden brown, mix in the chopped tomatoes, chilies, and curry leaves. Cook for 5 minutes.

Add the chicken pieces, 5 teaspoons of salt, and 2 tablespoons of ginger and garlic paste. Mix well.

Add 6 tablespoons of Kashmiri mixed masala and mix again.

Pour in 2 L of water and add the potatoes. Mix well again.

Cover and cook on high heat for 20 minutes, ensuring it is cooking vigorously.

After 20 minutes, gently mix and reduce the heat to medium. Cook for another 30 minutes.

After 30 minutes, check that the gravy is thick and the potatoes are soft. Add a handful of roughly chopped coriander.

Cover and cook on low heat for 10 minutes.

After 10 minutes, the chicken curry is done. Plate the curry.
