Preheat oven to 350°F (175°C).

Melt ghee in a small saucepan over low heat.

Layer fillo dough in a greased baking dish, brushing each layer with melted ghee.

Bake fillo layers for 15-20 minutes until golden brown.

Prepare sugar syrup separately.

Spread the Eshta over the baked fillo layers evenly.

Top with additional fillo layers, brushing with ghee in between.

Bake for an additional 20-25 minutes until the top is crispy and golden.

Remove from oven and pour cooled sugar syrup over the hot dessert.

Let it sit for at least 30 minutes to absorb the syrup.
