Ugandan Style Beef Curry

Cut beef into bite-sized pieces.
Place beef in a saucepan and add water, boiling for 1 hour while skimming off scum.
Remove beef from stock and transfer to a pan for cooking.
Add 2 tsp of cooking oil to the pan and brown the beef over medium heat for 5-8 minutes.
Add chopped onions and cook until soft and translucent, stirring constantly.
Add chopped ginger, minced garlic, and dried rosemary, mixing until beef is coated with aromatics.
Add sliced bell peppers and soften for about 5 minutes, stirring constantly.
Add 2 cups of homemade tomato sauce and season with 1 tsp salt and 0.5 tsp chili powder (optional).
Add 2 tbsp of curry powder and mix until beef is smothered in spices and sauce.
Add the beef stock back to the saucepan and mix everything together.
Cover and cook over low heat for 1 hour.
Add 1 tbsp of beef seasoning and 2 tbsp of coconut powder mixed with water to thicken the curry.
Mix everything well and the beef curry is ready to be plated.
