Safi Fish with Sweet Rice (Muhammar)

14 Safi fish
2 ½ tbsp salt
2 tbsp mixed spices
Frying oil
½ tsp saffron
¼ cup sugar
20 cups water
5 ¾ cup rice
3 tbsp butter
½ tsp cardamom powder

Clean fish and sprinkle with salt, spice and keep aside for an hour, then fry in oil average heat.

Soak saffron in rose water and set aside.

Fry half the amount of sugar in pot and then add water after sugar melts and becomes fully reddish, and then cover and leave it until it boils. Then add the remaining amount of sugar and stir.

Add rice and leave for 15 minutes, then leave to dry up.

Place butter in the pot, then add rice and soaked rosewater with saffron, sprinkle cardamom then cover and simmer for 35 minutes.

Put rice in a serving plate with fish on top, and serve.
