Clean the 5 kg subaiti fish well.

Add lots of salt to the fish and let it marinate for half an hour to one hour.

Remove the seeds from 1 kg of dates and soak them in hot water for half an hour to one hour until soft.

In a pan, add oil and roughly chopped onions and fry them.

Add garlic to the pan.

Add 2 teaspoons of salt, 1 tablespoon of mixed spice, and 1/2 teaspoon of turmeric to the pan and mix well.

Add dehydrated black lemon and coriander leaves to the mixture and leave it aside.

Check the soaked dates, remove the water, and mash them using a potato masher.

Add tamarind paste to the mashed dates and mix well, then set aside.

Wash the marinated fish again and fill the stomach of the fish with the mixture.

Take aluminum foil and place some of the date and tamarind mixture inside, then lay it on the fish.

Wrap the fish tightly with multiple layers of aluminum foil.

Preheat the gas oven to 240 degrees Celsius.

Place the wrapped fish in a tray and bake it, flipping carefully from time to time.

After one and a half hours, the subaiti fish is ready.
