1 teaspoon roasted cumin powder
1 teaspoon amchur
1 teaspoon garam masala
2 cups all-purpose flour
1/2 cup ghee
1 onion, finely chopped
1/4 cup coriander, chopped

Prepare yellow chutney by blending roasted peanuts, green chili, salt, black salt, asafoetida, lemon, and turmeric into a paste.

Prepare red chutney by soaking Kashmiri red chili, garlic, cumin, salt, black salt, and a little water, then blend into a paste.

Prepare tamarind chutney by cooking tamarind water, jaggery, salt, black salt, and roasted cumin powder until thick.

In a mixing bowl, combine all-purpose flour, salt, ajwain, and ghee, then gradually add water to form a medium-tight dough.

For the stuffing, mash boiled potatoes and mix in boiled peas, ginger, green chili, and coriander paste.
