Prepare the dumpling dough by mixing 8 tablespoons of flour, 4 tablespoons of starch, and 5 tablespoons of water in a bowl.

2

Knead the dough until smooth and let it rest for a while.

3

Chop the vegetables: slice 1/2 Japanese pumpkin, 1 carrot, 1/2 daikon (radish), and 1 onion.

4

In a pot, heat 1 tablespoon of oil and sauté the chopped onion until translucent.

5

Add 300g of pork belly to the pot and cook until browned.

Add the remaining chopped vegetables and stir-fry for a few minutes.

Once boiling, add 2-3 ladle-fulls of miso, 3 tablespoons of mentsuyu, and 3 tablespoons of mirin to the pot.

9

Let the soup simmer until the vegetables are tender.

10

While the soup is simmering, roll out the dumpling dough and cut it into circles.
