Prepare the ingredients: 150 grams of smoked bacon, 3 large onions, 1.5 kilos of pork shoulder, 6 to 8 cloves of garlic, 2 tablespoons of tomato paste, and 2 kilos of potatoes.
Boil water for the potatoes.
Add 150 grams of sliced smoked bacon to a pot and let it render its fat.
Add 1.5 kilos of pork shoulder to the pot and allow it to release its juices before frying it in its own fat.
Season the meat with salt and black pepper to taste.
Add 2 tablespoons of tomato paste to the meat for flavor and color.
Chop 3 large onions finely and add them to the pot along with 6 to 8 cloves of garlic.
Add a small amount of water (about 2 deciliters) and cover the pot to cook for about an hour, adding more water if necessary until the meat is tender.
Prepare the potatoes by coating them in oil or fat, seasoning with salt, and baking them in the oven until done.
Serve the dish garnished with parsley and alongside pickled cucumbers.
