Gently place the eggs into the simmering water and let them cook for about 12 minutes.

Remove the eggs and put them in an ice water bath to cool down before peeling.

Cut each egg in half lengthwise and remove the yolks into a bowl.

In the bowl, combine the egg yolks with 1/4 cup mayonnaise, 1 teaspoon mustard, 1/2 teaspoon white vinegar, 1/4 teaspoon salt, and a pinch of black pepper.

Mash the yolks and other ingredients together using a fork until well combined.
