Guyanese Fish Cake, a beloved snack in Guyana, reflects the country's rich culinary heritage influenced by African, Indian, and Indigenous cultures. Traditionally enjoyed during festivities or as street food, these fritters combine fresh fish with spices and herbs, creating a crispy exterior and flavorful interior. Today, they are popular not only in Guyana but also among the diaspora, often served at gatherings and celebrations.

Boil potatoes in a pot of water until fork tender.
In another pan, heat 2 tablespoons of oil and add diced onions, cooking for about 1 minute.
Add garlic to the onions and stir well.
Add green onions to the pan and stir to combine.
Add fresh diced tomatoes (optional) and cook for about 2-3 minutes, then set aside.
Drain the boiled potatoes and place them in a clean bowl while hot.
Mash the potatoes with a fork until there are no lumps remaining.
Fold in the onion, garlic, and spice mixture into the mashed potatoes and set aside.
In a pot, add a few sprigs of thyme and snapper fish, cooking for about 7-8 minutes.
Remove the fish, drain the water, and place it in a clean bowl, removing skins and bones carefully.
Flake the fish into chunky pieces, avoiding mushiness.
Add Worcestershire sauce, House Green seasoning, smoked paprika, and cilantro to the fish and mix well.
Add Creole seasoning, onion powder, garlic powder, and black pepper to the fish mixture and continue mixing.
Add the flaked fish to the mashed potatoes and combine well.
Beat 1 egg and add it to the mixture (optional to omit).
Whisk flour with the rest of the ingredients.
Take a portion of the fish mixture, roll it into a ball, and coat it in flour carefully.
Repeat the rolling and coating process for the remaining fish mixture.
Fry the coated fish cakes until golden brown, then remove and drain.
