In a skillet, cook chopped onion and garlic until translucent, about 3-4 minutes.
Add ground beef to the skillet and cook until browned, about 5-7 minutes.
Stir in chopped green olives, hard-boiled eggs, cheese, black pepper, and parsley; mix well and remove from heat.
Roll out the dough on a floured surface until thin.
Cut the dough into circles, about 5 inches in diameter.
Place a spoonful of filling in the center of each circle.
Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
Brush the tops with egg wash for a golden finish.
Arrange the pastries on a baking sheet lined with parchment paper.
Bake for 25-30 minutes or until golden brown.
Remove from the oven and let cool slightly before serving.
