Meat Stuffed Pita Arayes

Arayes are a beloved Middle Eastern street food, particularly popular in Israel and Lebanon. Traditionally made with spiced ground meat stuffed into pita bread and grilled, they showcase the region's rich culinary heritage. Often served as a snack or part of a mezze platter, arayes have gained popularity worldwide, with variations that include different meats and spices.

Ground turkey is lower in fat, while ground chicken is often less expensive.

Walnuts provide healthy fats, while sunflower seeds are budget-friendly.
Combine white bread flour, whole wheat bread flour, water, yeast, salt, and olive oil in a large bowl.
Mix to dissolve the salt and yeast, then add the whole wheat flour and mix until there's no dry flour left.
Add white bread flour and mix to form a slightly sticky dough.
Cover the dough and refrigerate for 30 minutes.
After 30 minutes, perform a fold on the dough by wetting hands and folding the sides into the middle.
Cover and refrigerate for a long cold fermentation of 18 to 24 hours.
After fermentation, divide the dough into four equal pieces and shape each piece into a ball.
Cover the dough balls and let them proof for about 1 hour.
Preheat the oven to 240°C (465°F) with the fan on.
Flatten each dough ball, roll it out, and bake for 3 to 4 minutes until cooked.
Cut each pita in half and fill with the meat mixture, pressing to ensure the filling is compact.
Brush the outside of the pita with olive oil.
Heat a non-stick frying pan over medium heat and cook the filled pitas for 4 to 5 minutes, flipping every minute until cooked through.
