Soak 500 grams of green peas and cook them for 25 minutes.
In a skillet with olive oil, prepare a flavor base with diced onion and garlic, seasoning with aji de color, aji in paste, finely chopped celery, parsley, and thyme, adding black pepper and coarse salt.
Add chicha de San Javier to the mixture for flavor.
Cut the pork shoulder into four thick slices and marinate overnight with vinegar, cumin, oregano, garlic, and salt.
Sear the pork slices in the flavor base for a few minutes until heated through.
Finish the pea stew by seasoning with salt and pepper, then add butter to thicken and flavor it, followed by basil leaves.
Prepare a fresh salad with sliced cucumber, pickled onion, and aji, seasoning with olive oil, salt, and pepper.
Plate the pea stew, top with the pork slices, and add the fresh salad on top.
