1 cup tofu, cubed
2 cups broccoli, chopped
1 cup cauliflower, chopped
1 cup carrots, sliced
1 cup king oyster mushrooms, sliced
1 cup sliced mushrooms
1 cup baby corn, cut into pieces
1 cup zucchini, sliced
1 cup wood ear mushrooms, soaked and sliced
1 medium brown onion, sliced
1 inch ginger, grated
2 cloves garlic, minced
2 tbsp vegetarian oyster sauce
1/4 cup vegetable stock
1 cup bamboo shoots, drained
1 tsp cornstarch
1/4 cup water
1 tbsp sesame oil

Soak wood ear mushrooms in water for 2 hours before cooking.

Chop broccoli and cauliflower florets, slice carrots, chop king oyster mushrooms, slice mushrooms, baby corn, and zucchini.

Chop brown onions, finely dice ginger and garlic.

Boil broccoli and cauliflower for 3-4 minutes until partly cooked.

Heat a wok over medium-high heat and add onion and carrot.

Add diced ginger and garlic, followed by king oyster mushrooms, zucchini, mushrooms, baby corn, and wood ear mushrooms.

Add 1 cup of vegetable stock to the vegetables and stir for a couple of minutes.

Add vegetarian oyster sauce (or soy sauce) and stir well, letting it simmer for a couple of minutes.

Add crispy fried tofu and canned bamboo shoots, cooking briefly since bamboo shoots are pre-cooked.

Make a cornstarch slurry with equal parts cornstarch and water and whisk into the boiling liquid until desired consistency is reached.

Finish with a dash of sesame oil.
