1 cup bamboo fungus
4 oz vermicelli noodles
1 cup cloud ear fungus
1 cup dried shiitake mushrooms, rehydrated and sliced
1 cup seafood mushrooms, sliced
1 cup king oyster mushroom, sliced
1 cup celery, chopped
2 cups napa cabbage, chopped
1 cup carrots, sliced
2 cloves garlic, minced
1 inch ginger, grated
1 cup beancurd sheets, cut into strips
1/4 cup fermented red bean curd
2 tbsp vegetarian oyster sauce
2 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp cooking wine
1 tsp sugar
to taste salt
to taste white pepper

Soak bamboo fungus in warm water for 10 minutes, then wash it with cold water to cool it down.

Soak vermicelli, cloud ear fungus, and dried shiitake mushrooms in warm water, reserving the shiitake soaking water for later.

Cut the ends off the seafood mushrooms and soak them in water to clean.

Slice king oyster mushrooms.
