~3 tablespoons oil
1 head garlic, finely chopped
1 bottle Chinese red fermented bean curd, mixed into a thin paste with 1 cup water
1/2 cup sugar
1 large can (~400g) champignons, drained, rinsed and chopped in half if large
1 large handful dried black cloud ear fungus, soaked in cold water (~1 hour or till soft), roughly chopped
~15 Dried Chinese mushrooms, soaked in cold water (~5 hours or till soft), sliced into chunks
1 handful black woodear fungus, soaked in cold water (~2 hour or till soft), roughly chopped
3 or 4 carrots, peeled and sliced
1 whole Wombok (Napa) cabbage, roughly chopped and blanched
1 cup water
1 packet pre-fried bean curd sheets, soaked in cold water (~1/2 hour or till just soft enough to cut into segments)
4 bundles mung bean noodles (aka glass noodles or cellophane noodles)

Prepare dried vegetables first, they need to be soaked and chopped as described in ingredients.

Prepare other vegetables as described in ingredients section. You can blanch the wombok (aka Napa) cabbage ahead of time or just before you start cooking the dish as done in the video.

Heat the oil and fry the garlic till fragrant, being careful not to burn it as it will become bitter.

Add fermented soy bean and water mix, give a good stir, add the half cup sugar and stir to dissolve. Bring to the boil stirring occasionally.

Add ingredients in the order listed in ingredients section, incorporating each one into the mix before adding the next.

Bring the mixture to the boil, and simmer for 3-4 minutes.

Taste and adjust seasoning, add more sugar if needed.

Add noodle bundles and cook through - they turn clear when cooked. Snip with some scissors to encourage them to break apart and cook.
