Start with 1.5 cups of milk and add 2 tablespoons of lemon juice, mix together and let it sit for 5-10 minutes to split.
In a separate bowl, combine 2 cups of all-purpose flour, 1/4 cup of sugar, and 1 teaspoon of baking powder, then whisk together and set aside.
In another large bowl, add the milk and lemon juice mixture, then add 1/4 cup of melted salted butter and 1 teaspoon of vanilla extract, whisk until combined.
Gradually add the dry mixture to the wet ingredients while continuously whisking until fully incorporated.
If the batter is too thick, add 1/3 cup of hot water and mix until smooth.
Preheat the waffle iron and brush it generously with melted butter.
Scoop the batter into the preheated waffle iron and cook until golden brown and crispy.
If you don't have a waffle maker, use a greased sandwich griller to cook the batter on both sides until crisp.
Serve the waffles with toppings such as butter, blueberries, maple syrup, ice cream, and Nutella.
