1

Bring a big pot of water to a boil.

2

Remove silver skin from the New York strip steak and slice it into 1/4 inch thick slices.

3

Marinate the beef with 1/4 teaspoon of salt, 1 teaspoon of grated ginger, 1 1/2 teaspoon of dark soy sauce, 2 teaspoon of cornstarch, 1 egg white, and 1/4 teaspoon of baking soda. Mix well and add a drizzle of oil to coat the beef. Set aside for 15 minutes.

4

Prepare the vegetables: cut 2 scallions into 2 1/2 inch long pieces, slice 1/3 of a sweet onion thinly, and set aside. Mince 1 tablespoon of garlic and set aside.

5

Cook 150 g of spaghetti in boiling water for 8 minutes (1 minute less than package instructions) and then drain in a colander, shaking off excess water. Set aside.

6

In a bowl, mix together 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of tomato paste, 1/2 tablespoon of Worcestershire sauce, 2 teaspoon of dark soy sauce, 1 teaspoon of sugar, 1/2 teaspoon of cornstarch, a ton of freshly ground black pepper, and 1/3 cup of water. Mix well and set aside.

7

Heat a carbon steel wok over high heat until smoking hot, add cooking oil, and swirl to coat the bottom.

8

Add the marinated beef to the wok, spreading it out to cook until the meat changes color, about 2 minutes. Remove the beef from the wok and set aside, leaving the oil behind.

9

Turn the heat to medium, add the sliced onion and minced garlic to the wok, and stir for a couple of minutes until the onion is soft.

10

Add the bell pepper and cooked spaghetti to the wok, using tongs to fluff the noodles. Stir until the vegetables reach your desired doneness.

11

Add the sauce, beef, and scallions to the wok, mixing everything until well combined.
