1

Prepare ingredients: dice 2 onions, chop 7 cloves of garlic, and a thumbnail size of ginger for a curry paste.

2

Season chicken thighs (off the bone) with 1 teaspoon salt, 1 tablespoon mustard oil, half a teaspoon turmeric powder, and Kashmir red chili.

3

Let the seasoned chicken sit for 30 minutes in the fridge.

4

Heat 1 cup of cooking oil in a pan until hot.

5

Add the diced onions and sauté until golden brown.

6

Add the chopped ginger and cook for about 2 minutes.

7

Add the marinated chicken thighs to the pan and cook for 10 minutes, turning halfway to avoid sticking.

8

Remove the chicken and change the oil, keeping the flavorful residue in the pan.

9

Add 6 tablespoons of the flavored oil back to the pan and turn the heat on.

10

Add the sautéed onions, garlic, and ginger back to the pan along with 1 teaspoon of salt and the green chilies.

11

Add half a cup of water to deglaze the pan and bring to a simmer for 6 to 8 minutes until the onions soften.

12

Add 1 tablespoon of tomato puri, 2 chopped tomatoes, half a teaspoon of turmeric powder, 1 teaspoon of Kashmir red chili, 2 teaspoons of ground coriander, and 1 teaspoon of ground cumin to the pan.

13

Stir and cook on high heat until the mixture forms a paste, about 1 minute.

14

Add 1 cup of water to the mixture and cook for 8 to 10 minutes until the tomatoes are mushy and the oil separates from the sauce.

15

Add the chicken back into the pan, ensuring it's coated with the sauce, and cook on medium heat.
