220 grams - baked beans
2/3 cup - red chili
1 pc - beef cube
6 pcs - spicy chilis for garnish
5 stalks - spring onions for garnish

Parboil the ox tail in enough water to submerge the ingredients for 30 minutes.

In a large pot, add 7 cups of water, 2 stalks of lemongrass, and 1 tbsp of peppercorn; bring to a boil.

In a separate pan, heat 3 tbsp of olive oil and sauté 2 slices of ginger, 1/3 cup of garlic, and 2/3 cup of shallots until fragrant.

Add the parboiled ox tail to the sautéed mixture.

Stir in 2 tbsp of fish sauce, 9 cups of water, 330 ml of sprite, 1 tsp of ground pepper, 1 tbsp of fermented black beans, 4 tbsp of tomato paste, 2 tbsp of spicy chilis, and 2 tbsp of peanut butter; mix well.

Add 220 grams of baked beans and 2/3 cup of red chili; stir to combine.

Add 1 beef cube and simmer for approximately 4 hours until tender.

Garnish with 6 pcs of spicy chilis and 5 stalks of spring onions before serving.
