Stir-Fry Shrimp and Okra with XO Sauce

1 lb (size 21/25, Jumbo) shrimp with shell
55g (3oz) Thai basil
300g (12oz) Okra (lady finger)
4 cloves garlic
1 small yellow onion
2 red Thai chili peppers
2 tbsp vegetables oil
3 tbsp XO sauce
2 tbsp vegetarian oyster sauce
⅛ tsp or pinch of salt

Devein the shrimp with a toothpick from the middle back of shrimp, wash with cold water and add 1 tbsp salt, gently rub them and rinse water several times, then transfer to a food strainer/colander and set aside.

Pick the good leaves of Thai basil, wash at least 2-3 times, drain and set aside.

Clean okra with 1 tsp salt and water by gently rubbing each one, wash for at least 2-3 times, drain and set aside.

Gently tap the garlic cloves with a knife, cut off the root end, remove skin, chop and mince.

Cut off stem and root end of the yellow onion, peel off skin, cut the onion in half lengthwise and into long strips each a half inch wide.

Wash and cut the red Thai chili peppers with a diagonal slice.

Cut off hard stem of okra, slice it diagonally, about ¼ to ½ inch thick.

Heat up the pan with high heat, add 2 tbsp vegetable oil. Once it’s hot, add minced garlic, sauté until light brown.

Add shrimp and gently stir it. Add 3 tbsp XO sauce, 2 tbsp vegetarian oyster sauce and ⅛ tsp or pinch of salt. Mix, stir fry both sides for 4 minutes or until it turns orange red.

Add onion and stir for 1 minute.

Add okra and stir fry for another 2-3 minutes.

Add Thai basil in and gently mix them.

Lastly, add chopped chili and stir fry for 1-2 minutes.

Transfer to plate and it’s ready to serve.
