1/2 teaspoon white sesame seeds

Take 1 cup of poha and add it to a grinder jar.

Add 1/2 cup of semolina to the grinder jar.

Grind the poha and semolina together until they are well combined, but do not make a fine powder; it should remain slightly coarse.

Transfer the mixture to a bowl.

In the same grinder jar, add 1/4 cup of beetroot and 1/4 cup of carrot.

Add a little water while grinding to make a thick paste, using about 1/4 cup of water.

Pour the beetroot and carrot paste into the bowl with the poha and semolina mixture.

Add 1/4 cup of yogurt to the mixture and mix everything well until it forms a dough-like consistency.

If the mixture seems dry, add an extra tablespoon or two of yogurt and mix with your hands.

Cover the mixture and let it rest for 10 minutes.

After 10 minutes, add salt to taste, 1/2 teaspoon roasted cumin powder, and a pinch of ajwain to the mixture and mix well.

If the mixture has become too dry, gradually add a little water until it becomes soft.

Form small balls from the mixture, greasing your hands with a little oil before rolling them into balls.

Grease a steaming plate with oil and place the balls on it.

Once the water is boiling, place the steaming plate over it and cover to steam for 10-12 minutes.

After 10 minutes, remove the plate from the steamer and let the balls cool slightly.

To enhance the flavor, heat a pan on medium flame and add 1 tablespoon of oil.

Once the oil is hot, add 1/2 teaspoon mustard seeds, 1/2 teaspoon white sesame seeds, and curry leaves to the pan.

Mix these ingredients and then add the steamed balls to the pan.

Sauté the balls for about a minute until they are slightly crispy on the outside.

Serve the balls with dry chutney or peanut chutney.
