Bread Omelette is a popular street food in India, often enjoyed as a quick breakfast or snack. It reflects the fusion of Western and Indian culinary traditions, combining the simplicity of an omelette with the heartiness of bread. Today, variations abound, with many adding spices or different vegetables to suit local tastes.
Slice the bread into half and set aside.
In a bowl, add 1 egg, pink Himalayan salt as needed, and a splash of water. Mix well with a fork.
Add in 1/2 of an onion and 1 finely chopped green chili. Mix well.
Add in 1/2 carrot finely chopped and some fresh spring onion finely chopped. Mix this all well.
Heat a cast tawa and add 1 to 2 teaspoons of wood pressed coconut oil.
Once the oil is heated, reduce the flame to the lowest and pour in the egg mix.
Place the bread slice on top of the egg mix and then flip the bread slice over.
Sprinkle some spring onion on top of the bread slice.
After a couple of minutes, carefully flip it over and fold in the egg from the sides.
Carefully flip it over and divide it into half with a spatula.
Sprinkle in some freshly ground black pepper powder and fold the bread into half.
Serve on a plate and garnish with some spring onions.
