Whisk eggs in a bowl with salt, black pepper, and chat masala until well combined.
Chop onion, green chili, tomato, and cilantro finely.
Heat cooking oil in a skillet over medium heat until hot.
Add chopped onion and green chili to the skillet; sauté until onion is translucent, about 2-3 minutes.
Stir in chopped tomato and cook until soft, about 2 minutes.
Pour the egg mixture into the skillet; cook without stirring until edges begin to set, about 2-3 minutes.
Place slices of bread on top of the omelette, pressing down gently.
Flip the omelette carefully, cooking the other side until golden, about 2-3 minutes.
Remove from skillet and let cool slightly before slicing.
Serve hot, garnished with cilantro.
