Start with 2 cups of all-purpose flour and 1/4 cup of cornstarch.
Add 1 tablespoon of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg to the dry ingredients and mix well.
In a separate bowl, combine 2 cups of whole milk and 1/2 cup of vegetable oil.
Separate 2 whole eggs, placing the yolks in the milk mixture and the whites in a separate bowl.
Whisk the egg yolks into the milk mixture until combined.
Whip the egg whites to soft peaks and set aside.
Combine the wet and dry ingredients, mixing until just combined.
Gently fold in the whipped egg whites with a rubber spatula, being careful not to overmix.
Preheat the waffle iron for about 5 minutes and spray with non-stick spray.
Scoop in 3/4 cup of batter per waffle into the preheated waffle iron.
Cook the waffles according to your iron's instructions or until they are golden brown.
Prepare toppings such as chocolate, sprinkles, or maple syrup while the waffles are cooking.
