200g of dry biscuits
100 g of melted butter
1/4 of teaspoon nutmeg
600 g of cream cheese
3 eggs
150 g of sugar
1 spoon of lemon juice
200 ml cream 30-35%

Preheat the oven to 200°C (392°F).

Press the biscuits crumbs (mixed with butter) into an even layer on the bottom of the prepared pan. Bake the crust for 10 minutes. Remove the pan from the oven and set aside.

Combine the cream cheese, sugar, eggs, lemon juice, cream and vanilla. Beat on low speed until just well combined.

Pour the batter on top of the crust. Bake at 200°C (392°F) for 15 minutes.

Then pour boiling water into the different pan under roasting pan (the water bath).

Reduce the oven temperature to 110°C (230°F) and bake 1 hour and 30 minutes to 1 hour and 45 minutes.

Transfer the cheesecake to the fridge to cool for at least 8 hours or overnight.
