Preheat the oven to 350°F.

In a large bowl, add 1 and 1/2 cups of graham cracker crumbs and 2 tablespoons of granulated sugar. Mix well.

Add 1/4 cup of unsalted butter to the mixture and combine until it resembles a wet sandy mixture.

Transfer the mixture into a 9-inch springform pan and press it down evenly, creating a partial side crust.

Bake the crust in the oven for 15 minutes.

In a stand mixer fitted with a paddle attachment, add 3 blocks of room temperature cream cheese and mix on medium-low until smooth.

Gradually add 1 cup of granulated sugar while mixing on low speed.

Add 1/4 teaspoon of salt and 2 teaspoons of vanilla extract to the cream cheese mixture and mix until combined.

Add 3 eggs one at a time, mixing on medium-low and scraping the bowl after each addition.

Finally, add 1/2 cup of sour cream and mix until silky smooth.

Pour the cheesecake batter into the cooled crust.

Bake the cheesecake at 350°F for 15 minutes, then reduce the temperature to 300°F and bake for another 30-35 minutes until the center wobbles slightly.

Turn off the oven and leave the cheesecake inside for an hour to cool slowly.
