1

Start by cleaning and washing 1 kg of chicken thoroughly.

2

Add 2 tablespoons of ginger-garlic paste to the chicken.

3

Add 1 tablespoon of red chili powder, 0.5 teaspoon of turmeric powder, 2 tablespoons of coriander powder, 0.5 teaspoon of garam masala, and salt to taste (about 0.5 teaspoon).

4

Add 3 tablespoons of homemade tandoori masala.

5

Add 0.5 cup of strained yogurt and 1 tablespoon of ghee (or butter/oil).

6

Add food color (optional) and juice of 1 lemon.

7

Mix all the ingredients thoroughly using your hands.

8

Prepare a separate spice mix by grinding 4-5 Kashmiri red chilies and 1 handful of fresh coriander without water.

9

Add the ground spice mix to the chicken and mix well again.

10

Cover the chicken with foil and place a hot coal on top, drizzling a little oil or ghee over it. Cover it to let it marinate for 30-60 minutes.

11

For the cheese naan, take a bowl of all-purpose flour and add a little salt, baking soda, and baking powder (about a pinch of each).

12

Add 1-2 tablespoons of yogurt and 1 tablespoon of oil (or butter/ghee) to the flour.

13

Mix in a little sugar and knead the dough with warm milk until soft and smooth.

14

Cover the dough with a tissue and set aside to rest.

15

Heat oil in a pan for frying the chicken.

16

Fry the marinated chicken pieces until they are cooked and have a nice color, then set them aside.

17

In the same pan, add 2 finely chopped onions and sauté until soft.
