Dijon adds flavor without extra calories.

Put 6 eggs in a pot and add cold water to cover them.

Add a little salt and a cap full of white vinegar to the water.

Boil the eggs for 7 minutes after the water reaches a rolling boil.

Remove the eggs and place them in an ice bath to cool.

Peel the eggs under running water to help remove the shells easily.

Cut the eggs in half and scoop out the yolks into a bowl.

Mash the yolks until smooth.

Add mayonnaise, mustard, and relish to the yolks and mix until smooth.

Season with salt, pepper, and a little sugar to balance the flavors.

Fill a pastry bag with the yolk mixture and pipe it back into the egg whites.

Sprinkle paprika on top for garnish.
