Lay the slices of smoked salmon on top, avoiding too much overlap for balanced bites.
Roll out the second sheet of puff pastry and spread the remaining cream cheese evenly on it.
Lift the second sheet with its parchment paper and cover the filling, aligning the edges well.
Press around the edges with a fork to seal the filling inside during baking.
Use a sharp knife to lightly score the top pastry in a crisscross pattern to create a decorative effect.
Beat the egg and brush it over the entire surface, including the edges, for perfect browning.
Optionally, sprinkle poppy seeds or sesame seeds on top for added crunch.
Bake in the preheated oven on the lower rack for about 20 minutes or until the surface is golden and puffed up.
Let cool for a few minutes before cutting into squares for serving as a main dish or into small cubes for an appetizer.
Store leftovers in an airtight container in the fridge for two to three days, and reheat briefly in the oven or non-stick pan to regain crispiness.
