3 cups Rice (480g)
105ml Sushi vinegar
55ml Rice vinegar
55g Sugar
10g Salt
3ml Mirin
Some Salt
5cm Kelp (optional)

Cook the rice (3 cups of rice = 600ml of water).

Prepare the sushi vinegar by mixing all the ingredients. Optional: soak the kelp with the sushi vinegar overnight. Pour it over the rice and mix well.

Cut each square sheet of seaweed into 4 strips.

Slice the onion. Rub with salt then set it aside in cold water. After a while, pat the onion dry then mix with mayonnaise.

Wash and pat dry the lettuce with a paper towel. Cut the avocado into 12 slices.

Place sushi rice, lettuce, onion, avocado and salmon onto a slice of seaweed. Roll into a cone.
