A quick & easy salmon recipe with pak choy. Also a great BBQ recipe, classic Australian food for summer entertaining. Get this BBQ salmon recipe & shop ingredients online: http://www2.woolworthsonline.com.au/Shop/Recipe/3306 Brush salmon with oil and turmeric, cook on barbecue grill for 2 minutes each side, transfer to a plate. Char-grill the baby pak choy for 1 minute each side. Make the cucumber salad. Serve salmon and pak choy with cucumber salad and coconut rice, if using. Prep mins: 10 Cook mins: 10 Serves: 4 Ingredients: 4 fresh Australian salmon skinned & boned portions 2 tablespoons Woolworths Select peanut oil, plus extra to drizzle 1-2 teaspoons Woolworths Select ground turmeric 2 bunches baby pak choy 1 lime, sliced 2 tablespoons lime juice 1 Lebanese cucumber, chopped 1 teaspoon Homebrand caster sugar Β½ cup coarsely chopped fresh coriander leaves and stems Fried shallots, to serve Method: 1. Heat barbecue grill plate to medium. Combine oil and turmeric in a small bowl. Brush oil over salmon. Grill salmon for 2 minutes each side or until cooked to your liking. Transfer to a plate. Meanwhile, cut washed pak choy lengthways into halves or quarters depending on size, through the core to keep leaves intact. Drizzle with a little oil. Grill for 1 minute each side or until tender. Add cut limes to barbecue and grill for 1-2 minutes. 2. Combine 1 tablespoon oil, lime juice, cucumber, sugar and coriander in a bowl, mix to coat. Arrange pak choy and salmon on a platter with cucumber salad and scatter with fried shallots with coconut rice to the side. Tip 1: To make Coconut rice, combine 1.5 cups water and 270ml can coconut milk in a medium saucepan on the barbecue wok burner. Add 1 ΒΌ cups basmati rice and a good pinch of salt. Bring to a simmer, stirring occasional-ly and cook for 10 minutes. Place lid on pan, turn off heat and stand for 3 minutes. Fluff with a fork. Any left over rice can be turned into Coconut fried rice with flaked salmon. Tip 2: You can easily substitute the salmon for your favourite white fish or chicken breast steaks Tip 3: For a vegetarian alternative substitute Macro vegetarian tofu burger for salmon and substitute Tamari soy for the fish sauce.
