1 1/2 lb pork, cut into strips or cubed
2 large eggplant, halved and cut to serving size
1 large onion, chopped
7 cloves garlic, minced
1 large tomato, sliced
1 large green chili, sliced
5 tbsp shrimp paste
2 tbsp oil
1/4 tsp pepper
1 tsp sugar
1 1/2 cup water

Cut the eggplant into serving pieces. Soak in water to avoid darkening.

Heat oil over medium high heat and fry the eggplants. Once fried, set aside.

Sear the pork until light/golden brown (as you prefer). Remove from the pan, keeping the oil in the pan for sautéing.

In the same pan, add onion and garlic. Cook until fragrant.

Add tomatoes and cook until soft, about 3 minutes.

Add the shrimp paste and stir until well combined.

Add back the seared pork and stir until pork is coated with shrimp paste.

Season with pepper.

Add water and sugar, stirring until sugar dissolves.

Cover with lid and let it simmer for 20 minutes or until the pork is fork tender. Add water if needed.

Once the pork is cooked and tender, add the green chilies and fried eggplant.

Let it simmer for 3 minutes.

Serve and enjoy! Best served with steamed rice.
