Take 200 g of milk powder in a bowl.

Add 75 g of ghee to the milk powder. You can use butter instead of ghee if desired.

Add 3 tablespoons of high-quality rose syrup to the mixture.

In a pot, pour 115 mL of water and turn on the stove.

Add 225 g of sugar to the water and bring it to a boil, gently simmering for approximately 5 to 6 minutes until it thickens into a lighter syrup consistency.

To check if the syrup is ready, drop a small amount into water and see if it can easily form a shape with your fingertips; this indicates a soft ball consistency.

Add all the milk powder mixture to the sugar syrup and start stirring immediately, then turn off the stove.

Once combined, turn the heat to the lowest setting and mix, occasionally lifting the pan off the flame to control the heat.

Continue mixing until the ghee is incorporated and the mixture can form a ball when tested with your hands.

Prepare a shallow 6x9 pan by placing parchment paper at the bottom and greasing it with butter or ghee if parchment is not available.

Pour the mixture into the prepared pan, noting that it should have a pourable consistency, not a dough.

Garnish the top with sliced pistachios and cashew nuts, pressing them gently into the mixture.

While the barfy is still warm, make markings on the top for easier cutting once cooled.
