Prepare the dough by mixing all-purpose flour with ghee and water until smooth.

Knead the dough for about 5-7 minutes until elastic, then cover and let it rest for 30 minutes.

In a pan, heat ghee and add chickpea flour, stirring continuously until golden brown, about 5 minutes.

Add sugar, cardamom, grated coconut, raisins, cashews, and pistachios to the chickpea flour mixture, mixing well.

Remove from heat and let the filling cool down.

Divide the dough into small balls and roll each into a small circle.

Place a spoonful of the filling in the center of each circle.

Fold the dough over the filling to create a half-moon shape, sealing the edges tightly.

Heat oil in a deep pan over medium heat until hot.

Fry the ghugharas in batches until golden brown, about 3-4 minutes per side.

Remove with a slotted spoon and drain on paper towels.
