Mansaf is a traditional Jordanian dish that symbolizes hospitality and generosity, often served during special occasions and celebrations. It features tender lamb cooked in a rich yogurt sauce, served over rice and flatbread. This dish is deeply rooted in Bedouin culture and is a source of national pride, representing Jordanian identity. Today, Mansaf has gained popularity beyond Jordan, with variations found in neighboring countries, each adding their unique twist.

Prepare the lamb by cutting it into large pieces.
Boil the lamb in a pot of salted water until tender, about 1.5 to 2 hours.
Remove the lamb and reserve the broth for later use.
In a separate pot, cook the jasmine rice in the reserved broth until fluffy, about 20 minutes.
Fry the onions in a pan until golden brown, then set aside.
In the same pan, toast the pine nuts and almonds until golden, about 3-4 minutes.
Layer the flatbread on a large serving platter.
Place the cooked rice on top of the flatbread.
Arrange the lamb pieces over the rice.
Drizzle the yogurt sauce over the lamb and rice.
Garnish with fried onions, toasted nuts, and fresh parsley.
