Soak jamid in water and blend to create a yogurt mixture.

In a large pot, wash the bone-in lamb and submerge it with the yogurt drink (lebanan).

Add the jamid to the pot and bring to high heat while constantly mixing to prevent separation of the yogurt.

Once it reaches a boil, reduce heat to medium-low and let it bubble for a couple of hours until the meat falls off the bone.

In another large pot, heat ghee and toss in jasmine rice with salt, toasting for a couple of minutes.

Submerge the toasted rice with water and cook like regular rice.

Toast pine nuts in ghee until golden, then remove from heat to prevent burning.

Once the lamb is done, lay out the flat bread, add the jasmine rice, and top with the meat, parsley, and toasted pine nuts.
