750 gms chicken (curry cut with bones)
2 small onions (100 gms)
2 medium red tomatoes (150 gms)
1” ginger (12 gms)
10-11 garlic cloves (12 gms)
2 green chillies (5 gms)
8-10 cashew nuts
1 tsp turmeric
2 tsp red chilli powder
2 tsp coriander powder
1 tsp Kashmiri chilli powder
3/4 tsp garam masala powder
4 tbsp coriander leaves (12 gms)
15 curry leaves
1.5 tsp salt
5-6 tbsp oil
3 tbsp chopped coriander leaves for garnish
250 ml water
3 tbsp curd/plain yogurt

Cut the onions and tomatoes into cubes, peel and chop the ginger and garlic.

Cut the green chillies into 2-3 pieces and chop the coriander leaves.

Add all the ingredients for the masala in the grinder/blender jar and blend until smooth.

Heat oil in a pressure cooker and add the blended masala paste. Fry on medium heat for around 5 minutes until the raw smell is gone.

Add the raw chicken and fry on high heat for around 2-3 minutes until the color changes.

Continue frying the chicken for another 3 minutes until it is slightly cooked and oil separates.

Add around 250 ml water, stir, and close the pressure cooker.

Pressure cook the chicken for 2 whistles (1 on high heat and 1 on medium heat), which should take a total of 8 minutes.

Allow the pressure to release on its own, remove the lid, and garnish with chopped coriander leaves.

Serve with roti or rice.
