Today, they are popular in various forms across the region and have found their way into international cuisine, celebrated for their flaky crust and rich fillings.

Prepare the dough by mixing 4 cups whole wheat flour, 1 1/2 teaspoons salt, and 1/4 cup dried milk in a mixing bowl.
In a separate bowl, combine 1/2 cup lukewarm water with 5 teaspoons dry yeast and let it sit for 5 minutes.
Add 1/4 cup olive oil, 1 cup lukewarm water, and 1/4 cup honey to the yeast mixture and mix well.
Gradually add the dry ingredient mixture to the wet ingredients while mixing.
Change the mixing attachment to a dough hook and knead until smooth.
Transfer the dough to a bowl brushed with olive oil, cover with plastic wrap and a kitchen towel, and let it rise in a warm place for about 1.5 hours or until doubled in size.
After rising, take a portion of the dough, form it into a ball, and let it rest for another 20-30 minutes.
In a skillet, heat 2 tablespoons vegetable oil and add 1 large chopped onion; sauté until soft (about 3 minutes).
Add 2 lbs minced beef and cook until browned, stirring constantly.
Season the meat with 1 tablespoon curry powder, 1 tablespoon mixed baharat spices, salt, and black pepper; mix well and cook on low heat for 10-15 minutes until tender and liquid evaporates.
Take a portion of the dough and roll it out to about 3-4 inches in diameter.
Place about 2 tablespoons of meat filling in the center and fold the dough to form a triangle, sealing the edges.
Place the formed pies seam side down on a baking tray lined with parchment paper, leaving space between each pie.
Cover the pies and let them rest for 15 minutes before baking.
Prepare an egg wash by whisking 2 eggs with 1 tablespoon water.
Make indentations with a fork on the pies to help steam escape, then brush with egg wash.
Preheat the oven to 400°F and bake the meat pies for 15-20 minutes until golden brown.
