1 Tbsp Chinese Cooking Wine
1 Tsp Coarse Black Pepper
Salt to Taste
20ml Water

Slice the garlic and onion.

Slice the green and red peppers.

Slice the beef into medium threads and place in a mixing bowl.

Add the salt, sugar, cooking wine and black pepper.

Add 20ml of water to the mixing bowl and mix all ingredients together.

Cover and leave to marinate for 20 minutes.

Place an iron steak plate over a flame and heat over medium heat.

Heat half a litre of oil in the wok, once the oil is hot then turn heat to low.

Place beef one piece at the time and fry for 10 seconds until turned to paler colour.

Remove the beef from the oil and place onto a dish, leave about 2 Tbsp of oil in the wok and discard the rest.

Turn heat to high, add garlic and onion to the wok, fry for few seconds.

Add the peppers and stir-fry for a minute.

Add the beef back.

Add the black bean sauce and stir-fry for a minute.

Transfer beef onto the hot iron plate, place an iron plate on a wooden stand and serve.
