Wash 1.5 kg of yuca and leave the skin on.

Make a cut along the skin of the yuca without touching the flesh, then peel it off using the knife.

Rinse the peeled yuca in water to remove impurities.

Cut the yuca in half and then into quarters to remove the root.

Cut the yuca into medium-sized pieces of even thickness.

Place the yuca in a pot of water with a good amount of salt and cook until soft but still firm.

Once cooked, drain the water and immediately mash the yuca while it's hot.

Add 2 tablespoons of crema de leche to the mashed yuca for creaminess and flavor.

Mix well and add salt to taste, then knead lightly to make it compact.

Set the yuca mixture aside and prepare the filling.

Heat oil in a pan and add 1 clove of garlic, chopped finely, and sauté until golden.

Add 0.5 onion, chopped finely, and let it soften.

Add 1 tomato and 0.5 bell pepper, and cook until softened.

Season with salt, pepper, cumin, and dried oregano, and mix well to create a sofrito.

Add 300 grams of beef, breaking it apart and mixing it with the sofrito.

Cook until the beef is fully cooked, then add a few drops of black sauce or soy sauce.

Finish with fresh chopped cilantro and set aside to cool.

Prepare a homemade ají by mixing 0.5 onion, 1 small tomato, salt, pepper, juice of 1 lemon, cilantro, and hot sauce in a bowl. Mix and refrigerate for at least 30 minutes.

To assemble, oil your hands to prevent sticking, take a piece of the yuca mixture, and shape it into a cylinder.

Make a hole at one end with your finger to fill with the cooled beef mixture.

Fill the hole with the beef filling, close it, and shape it as desired.

Optionally, add mozzarella cheese or other fillings as desired.

Once all are shaped, fry them in plenty of hot oil until golden brown.

Serve with a generous amount of ají.
