In a skillet, heat oil over medium heat.
Sauté onion, garlic, and bell pepper until soft, about 5 minutes.
Add ground meat, cumin, salt, and pepper; cook until meat is browned.
Mix meat filling with lime juice and cilantro; remove from heat.
Take a portion of mashed yuca and flatten it in your hand.
Place a spoonful of meat filling in the center and fold yuca over to seal.
Shape into a patty or oval.
Coat each carimañola in egg and then in bread crumbs.
Heat oil in a deep pan over medium heat until shimmering.
Fry carimañolas until golden brown, about 3-4 minutes per side.
Drain on paper towels and serve warm.
