Peel yuca and cut into pieces.

Cook yuca in a pressure cooker with enough water and 1 teaspoon of salt for 15 minutes after the valve sounds.

In another pot, heat 2 tablespoons of oil and add 1/2 chopped onion and 4 minced garlic cloves.

Add 1 green onion and sauté until softened.

Add 2 diced ripe tomatoes and cook until the mixture is ready.

Add 500 g of ground meat and season with 1/2 teaspoon of salt and cumin to taste.

Cover and cook on low heat until the meat is dry and no liquid remains.

Once the yuca is cooked, transfer it to a bowl and mash it with a fork, removing any tough fibers.

Add a drizzle of oil and a bit of salt to the mashed yuca and mix well.

Take a portion of the yuca and shape it into an elongated form, adding the meat filling and closing it up.

Heat enough oil in a container until hot and fry the carimañolas until golden brown, flipping them carefully to avoid breaking.

Remove the carimañolas once golden and serve with ají, guacamole, or suero costeño.
