Soak pork fat in a bowl of water with the juice of one lemon for about half an hour.
Drain the pork fat after soaking.
Chop parsley and both red and white onions finely.
Season the mixture with sea salt, coarse black pepper, and cinnamon.
Add lemon juice to the mixture and mix everything together by hand until well combined.
Chill the mixture in the refrigerator for 20 to 30 minutes.
Form the mixture into sausage patties and wrap them in the soaked pork fat.
Place the wrapped sausages onto skewers.
Grill the sausages on the barbecue for about 10 to 15 minutes until cooked through and nicely colored.
Prepare a sandwich by placing the sausages in pita bread, topping with salad and tzatziki.
