2 cups mixed vegetables (carrots, peas, potatoes)
1 cup bread crumbs
1/2 cup boiled and mashed potatoes
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp garam masala
1/2 tsp red chili powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped fresh coriander
2 tbsp oil (for frying)
1/2 cup all-purpose flour (for coating)
1/2 cup water (for coating)

Boil the mixed vegetables until tender, then drain and let cool.

In a mixing bowl, combine the boiled and mashed potatoes with the mixed vegetables.

Add cumin powder, coriander powder, garam masala, red chili powder, salt, black pepper, and chopped coriander to the mixture. Mix well.

Shape the mixture into small cutlets or patties.

In a separate bowl, mix all-purpose flour with water to create a batter.

Dip each cutlet into the batter, then coat with bread crumbs.

Heat oil in a frying pan over medium heat.

Fry the cutlets until golden brown on both sides, about 3-4 minutes per side.

Remove the cutlets and place them on paper towels to absorb excess oil.

Serve hot with chutney or sauce of your choice.
