Preheat oven to 400°F. Prepare a baking sheet with parchment paper, nonstick spray, or a light oil coating.

Place fish fillets (skin down, if applicable) on the baking sheet. Pat the fish dry with a paper towel. Season with salt and pepper. Add desired spices and garlic. Drizzle with olive oil for leaner fish.
